All of my clients update their stock levels manually. You could use a stock control system of some kind and link that to Opencart via an api call. I've not come across anyone who has done that. Others may have.

Just google "opencart ajax product editor" and take your pick. Some are a fair bit of money but if you have to edit products regularly then it's life changing!

We do them manually.
But we also drop ship and we get a file we download from our wholesaler and we have a script we built to read their inventory file and update the quantities. (Which BTW that script isn't good for anyone else as it has a lot of "us" focused code)
