Maybe be elementary the question, , but I don't find the answer. From where the email address is controlled which the payment is sent by paypal? as I modify it?

next to the Paypal option click the "wrench" icon" but I don't see a paypal entry?

No I don't see any entries. I installed the latest OpenCart this morning. I haven't installed any extra modules though?
I'm not sure if this has anything to do with it, but my shared host only allows php5 scripts to run with the exension .php5. So I added the line in the .htaccess file to treat php files as php5, the site seems to be working ok - tho I haven't tested throughly.

One last thing on this topic Qphoria, whats the best way to upgrade? The store is on the root of my domain and would like to keep it there.

If you just started using it, you are best off just starting fresh by deleting all the old files and doing a fresh install.
But if you want to upgrade, just copy all the folders from the new version over the top, matching the folder structure. Then read the upgrade readme
