I’ve been experimenting with customizing OpenCart for a niche career site.
If you're curious, https : // 247jobincanada.com/ is my actual site.
Is OpenCart flexible enough to handle listings and filters like job titles, locations, and deadlines?

You've reminded me of a Jurassic Park quote:
"Your scientists were so preoccupied with whether or not they could, they didn't stop to think if they should."
Yes it could be. No you shouldn't do it.
Use some software that's designed to be a job board like Jobberbase: https://www.jobberbase.com/
Or there are loads of others: https://arc.dev/talent-blog/php-developer-job-boards/

OpenCart is primarily an ecommerce software.
What exactly are you trying to sell? Is it job consultancy services? Digital items? Or is it purely a content site? Even for the latter, you could use a content management system like this one.
But without further details, it's hard to say, and there may be more suitable software packages. But hey, almost everything is possible with the OpenCart framework!
