Our server needs an OS upgrade, I'm trying to avoid / delay upgrading the store. I'm looking at maybe moving to a Cloudlinux / Cpanel server.

Will OC 3.0.3.6 will run on MYSQL 8.0 and PHP 7.3?

We're currently running MYSQL 5.7 and PHP 7.3.

No, it will not.
To be more precise, it will, but you will get many messages about incompatibility because of the php-version.

Using php 8.x you have to use the latest 3.0.4.1 release: https://www.opencart.com/index.php?rout ... load_id=79

We're not upgrading the PHP version, we're currently using PHP 7.3 and will continue using PHP 7.3.

It's MYSQL that will be changing from 5.7 to 8.0.

It should work fine. However, we recommend to try it out first on a test server, to be on the safe side.

Sorry my fault .. thought I am speaking with someone who knows what he is doing ..

And why not updating the php-version also?
You're loosing all benefits of php 8.x (security, faster loading, etc.) when continuing with php 7.3
