Our server needs an OS upgrade, I'm trying to avoid / delay upgrading the store. I'm looking at maybe moving to a Cloudlinux / Cpanel server.

It should work fine. However, we recommend to try it out first on a test server, to be on the safe side.

And why not updating the php-version also?
You're loosing all benefits of php 8.x (security, faster loading, etc.) when continuing with php 7.3

A lot depends on what extensions and custom coding you're using too. An upgrade might not be as bad as you think.
