is it possible to assign one or more shipping methods direct to a product?
I want that the customer can only see the possible shipping methods for the respective products?

Is it there also possible, that some payment methods depends on the shipping method?
E.g. if the shippment methofd is by DHL, that's not possible to choose payment at pickup, or if the shippement method is picup from store, that there is no cash by delivery?

Take a look at Clear Thinking's "Ultimate Shipping". It can do pretty much anything with shipping.
