When you download the 3.0.x.x branch you just get the latest code for the 3.0.x.x branch of OpenCart at the time you downloaded it, which could be between versions.

That just means it's the likely version number when it is released. When it is released it will appear at https://github.com/opencart/opencart/releases.
There are no major changes to the database so you should be able to just update your files. Always backup your files and database first and test locally if possible.
