I have looked at Opencart's document on Updating from 2.x.x to 3.0.x. Would that be the best way to upgrade? It seemed to be most straightforward. Let me know what I should look out for.

Fair enough. I have seen the Export/Import tool, and if I understand correctly, I should use Export/Import for Opencart version 2.2 (to export) and another tool for version 3.0 (to import).

Yes, SEO can be copied over, too. There are new worksheets for this, e.g. ProductSEOKeywords or CategorySEOKeywords.

I guess Geo Zones need to be added separately or used with Opencart's own export tool just for one table?

As an experiment, I tried Opencart's upgrade method in another folder with another copy of the database of Opencart 2.2. The upgrade actually went through fine, and everything is working, but the extension store doesn't load at all, and the number of tables in the database has increased to 153.
The fresh install of 3.0 I'm currently working on has just 136 tables, which only increased by three to 139 once I installed two extensions—the same extensions as the old store. So clearly, there were an extra 14 tables lying around, including the URL table (for SEO) leftover from Opencart 2.2 (and possibly from the previous upgrade from 1.5 back in 2017).
