Categories missing from add product dropdown menu [SOLVED]

Hello all, v 4.0.2.3 php 8.1
Fresh install, with a Opencart "recommended" add on theme.
When trying to add new product, the category selection in the dropdown menu is missing a category. Checking other pre-installed products, they all have the same issue when trying to change the existing category. Most of the categories were pre-installed, which I edited name etc. They show from the dropdown. On the one category I created myself, it doesn't show in the dropdown even though it shows in categories and is navigable. Any suggestions please ? See pics
