Me too, exact same problem, all of a sudden 29 dec 2021.
I am on opencart 1.5.5.1, PHP 5.4, surplustek.ca/phpinfo.php
Admin section works perfect, didn't touch anything and went error 500 on it's own

Probably because you're using PHP 5.4 and your hosting provider finally upgraded to a supported version which is years late.
