I don't know what I have done to stop products from displaying in their categories. in all categories of my website, what I get is "There are no Products in this Category"; " Showing 1 - 7 of 7 ( That shows that there are products assigned to that category but they are not displayed).

Most likely a 3rd party extension has modified the category controller and/or template because in a standard OpenCart it works just fine.
You are using a poorly implemented non-standard extension, namely the Journal3 framework, which will also clash with many other extensions. Hence you should get in touch with the Journal support, or change to a standard-compliant web theme. It's not an OpenCart bug!
