PHP Errors - Help required.

Hi Everyone,
I have an existing OpenCart website that has been running well for sometime until the last few weeks. I recently tried the Opencart Lightning Extension to see how this would improve the speed of my website and noticed I started getting some PHP errors. I removed the extension but I then also realised that all the isenselab extensions I had bought and had upgraded were not showing as upgraded in the modifications tab either. The PHP errors persisted so I decided to revert back to a previous backup from a week ago yet the PHP errors still exist. I had also recently moved to PHP 7 from 5.6 and wondered if this had caused any issues so I have also reverted back to 5.6

The type of errors I am getting are as follows.

Journal Theme (Latest revision)
Multiple extensions
PHP version 5.6.32
SSL enabled
SEO URLS - disabled (not sure how to set this up)
Operating System - Linux webcloud10.au.syrahost.com 2.6.32-773.26.1.lve1.4.35.el6.x86_64 #1 SMP Tue Sep 26 06:34:34 EDT 2017 x86_64
Web Server - Apache/2.2.34 (Unix) mod_ssl/2.2.34 OpenSSL/1.0.1e-fips mod_bwlimited/1.4 Phusion_Passenger/5.1.11 mod_perl/2.0.8 Perl/v5.10.1
Database Driver - MYSQLI
Database Server Version - 10.0.31-MariaDB-cll-lve

So I am looking for support on the PHP Errors and also advice on update to PHP 7
