I just noticed that If I disable/delete a product just because it is discontinued, I would never be able to see that product in an order if it was already ordered by a customer. It simply disappears in the order!

Does it mean that all products, even if they are discontinued, should be kept enabled just in case we'd need to view an old order?

Correct (but disabled to avoid further listing is good enough).
