I wanted to remove the company, address, postcode, city fields from the billing details and add two custom fields of my own. I was hoping to do this without having to edit the core code. Is there an extension that can support this?
First of all: which version are you using??
Second, in 2.x you can add custom fields at any time.
Third: for removing some fields, maybe an extension already exists - did you check them?

Opencart 2.2.0.0. Where in the dashboard can custom fields be added? I noticed in the country settings there is an address section which seems to determine which address fields the country supports. Is that how it works?

I plan on doing it myself. I know the basics of creating a module (created a custom payment method). But how to go about for example disabling a field in the address or add a field in a checkout? In terms of method calls
