I've been doing quite a bit of research about shipping set-ups and seen zone based shipping mentioned, but I can't find a way to enable it?
I basically want to charge one amount in teh UK, and another amount for the rest of the world. Is there an easy way to achieve that?

You can use shipping by weight for it too. Just set the different geo zones.
Running Opencart v3.0.3.9 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.
Set up duplicate geo zones for each area, and you can then offer different flat rates to that area. I have a quick tutorial on how to do that here:
