I have been having issues lately with some extensions/modules and have been unable to pin down which one is the issue. I think at this point I am going to do a clean install at some point. It is currently running Open Cart 1.5.4.1, I would upgrade it to 1.5.6.4 (I'm not a fan of OC 2.0+ as I've seen some sites having issues with it on Firefox)... Anyway, I have two questions:

1) Is 1.5.4.1 data compatible with 1.5.6.4, as I DO NOT want to lose my products and categories as it would be to painful and long to re-enter them
2) What is the best way to backup the current Products and Categories for 1.5.4.1 and then add them to the new site running 1.5.6.4 that would be clean install.

PEKU is a nice fellow, but unfortunately, his english language is sometimes a little hard to understand :D

Otherways, you may export your data into an EXCEL FIle and reimport it again later. But all those attempts
seem to be a little tricky, as one can read about on Forums like this one, frequently.

AND Read here, how to copy/paste an entire DB COntent, on the Server, into another empty DB. I would do this first.

Install v.1.5.6.latest, then make a copy of it's NEW DB, like shown in the image on the Page linked.
Then, empty out this Installation DB Copy , then, copy/paste your existing v.1.5.4 Content into this empty DB,
and then, rewrite your DB Config.php lines, to match the DB-COPY Name, and start it up. So, at least,
you will find out, what DOES NOT work, if something will not work, without harming anything. It possibly only requires a few new Tabless, to be created, to make it work.

ONLY INSTALL new SHOPS by USE of MYSQLI , MYSQL is not longer been handled by latest PHP Installations.
ALWAYS use a DB-PREFIX , preferrably OC_

I offer an upgrade service if you'd prefer to have it done professionally. I can clean everything else out, leaving only the core stuff but preserving all your orders, customers, products, etc

what about any reviews or testimonials from extension? (will they be lost?)
I can print out the testimonials and re-enter them. Reviews too if thats an issue

The reviews are safe
Testimonials data will be left alone, but you'll need an updated version of the same mod so that it reads the same tables.
