How and here do I install the "new color" of templates offered

If, for example, you have downloaded the "red" template, you copy the entire "red" folder into the folder catalog\template\

now, your template directory should contain a red and a default folder.

Go to admin and change the template for the store to "red"

Please note that these things only work on the default installation and will require you to duplicate any changes made to the default template to support other contributions, payment extensions etc.
