When someone checks out using paypal express, they may have a different address with paypal than what was entered in on the website. How can I pass the paypal address address back to override the opencart address when the order is completed?

Once the order is completed, the order cannot be altered. However, if you wish to set an override email address, the best moment and location would be during checkout either to ask to enter a current email address if any applies whenever PayPal Express Checkout is selected to initiate payment. Once entered, the email address could then be replaced from the controller/payment folder in the PayPal Express Checkout method where the order is being sent.

As far as I know, over API, it is not possible to change customer's information once sent to PayPal's invoice page.
