Choose my own stock status even if it is in stock

How can i do this

Choose my own stock status even it is in stock


end of live product has a stock of 1 but it says Availability: In Stock but if some one orders 2 im :-X so how can i choose my own stock status on a product instead of the Availability: In Stock status so it must show Availability: Last 1 Available
