Please note that the estimated shipping date (gts-o-est-ship-date) and estimated delivery date (gts-o-est-delivery-date) should vary according to a number of factors including delivery address, payment method selected (not all clear instantly), same day dispatch cutoff time, weekends, public holidays and delivery method (ground or air) etc.

I could not see any fields within your admin demo to handle this variance.

I already have a working solution (unfortunately this cannot be shared as I have customised this specifically for our store) but just thought I would mention this to help improve the extension you have created for the community.
