I just find out there is 2.0 now. What are the difference? Should I upgrade my store now or wait for 2.1 so most of the bugs are fixed if there are bugs?

Clearly not - because:
1. there is no working upgrade script right now
2. current 2.x version is not stable enough
3. if the next version will be more stable - the time will show it

Generally I would wait after the publishing for at least a minimum of 2,3 weeks to see if there are bugs.
But what can be done is, to install 2.x in a development environement - then you will see all changes by yourself, bugs as well.

Another big issue is there isn't any theme yet. I look at the demo and don't feel like it looks too different from 1.5.x. I would just use 1.5.x since it is much more stable with so many updates in years.

As a store I care the stable factor the most. If I want to make it looks fancy, I can use extension or do something with existing codes.

Generally, there are changes everywhere, but these are the new things that the end user can see. We've deliberately missed any new modules or payment types.

Now, several months later, I see the vast majority of modules were not upgraded to OpenCart 2. As I am just starting out with this platform, would it make sense to do it with an older version, if I want to make my life easier and have a bigger selection of modules to choose from?

Also, I'm worried about speed. I read somewhere that OpenCart 2 is faster than 1.5, but is it a noticeable difference? I know that speed is VERY important. Can the load times be improved with 1.5 to make it on par with 2.0?

Any other concerns I should think about? I don't want to opt for 1.5 if 2 is that much of a better platform.

I would appreciate any feedback I can get.
