Once I've installed a store and made various edits etc and am looking to install more stores, how much can one copy from the first install to avoid having to remake edits? Obviously the template files but what others can be overwritten without database issues (each store is a different database). Thanks

This is a tricky issue because there's a lot of modules who create new database tables for their use. I don't think there's a simple answer to this question...

Indead, watch out when copy a store.
Now, if you use same mods for every store you setup, normaly it should be ok.
But, every customer (store) is different, like for expl. a store want to us UPS mod, another Fedex....
etc...
If i whas you, i would install fresh copy's everytime.

Maybe database backup + folder backup -> to new site would be a working model? Of course you need to remove unwanted features from the new site but...

I do not know the intention behind, but could imagine that he wants to build several stores with similiar functionalities.
In this case I would install 1 'master' site (best done locally), add all modules, templates, etc. I need and make a new complete package of it (maybe also with adopted installer).
With this I could build many stores with 1 click (okay, maybe 2-3).
Basically the procedure is the same as described at the wiki.
