It can be done, there's always a way, but it may have to be done in the raw script of the pages, rewriting the script code.
I don't think the Admin panel included enough options for currency.
If you need a script writer to do it for you, many script writers work very cheap, as they can resell their scripts and make more money later from the same work.

They already added the MXN currency and set it to default. It just isn't working.
You can select any currency to be your default currency. You need to do what it says and clear your cache and reset your existing cookie to see the changes.

OC still needs to add a script refresh button in their Admin panel.
