There are no db changes from 1.3.4 to 1.4. The upgrade instructions that come with OpenCart are not worth following.

How to upgrade from 1.3.4 to 1.4:
1. Backup DB and Files
2. Upload all new files to FTP, overwrite the existing
3. Goto Admin page. Hit Ctrl+F5 on your keyboard if it looks all scrambled to update the css browser cache
4. Goto the Settings page and make sure all fields are correct. Be sure to change the template to "default" if it is something else.
5. Click Save and be sure you see the green success message. If you do not, then check each tab for individual field errors.
6. Goto Extension->Module and uninstall the "Currency" module. That file is not supported in 1.4.0 and was not updated. Ignore it or delete it from the ftp area in admin/controller/module/currency.php
7. Goto the Setting->User->UserGroups area. Edit "Top Administrators" and check any unchecked checkboxes. Save
8. Goto the frontpage. Hit Ctrl+F5 if the page looks scrambled. Verify everything is good.

Should it not be better to choose the default template before you do any upgrade?

Doesn't matter. The admin side isn't affected or disabled in anyway
