Separate country list for each multistore?

I have two OpenCart stores set up using multistore, one serves the US and Canada, and the other serves Europe.
I have everything figured out, set up and working the way I need it to except for one thing...the countries list.

I have enabled all of the relevant countries and disabled the ones that are not needed.

Here's the question: Is there any way to show only the relevant set of countries in the dropdowns on each site? - i.e not show US or Canada on the European site, and not show EU countries on the US site.

Does anyone know of a module/plugin that can do this as I can't find one?

That would likely be a custom mod. Basically you'd need to add the store_id column to the countries table and then find all references to country list loading (quite a handful of different locations) and update them all to respect this new store_id flag.
