Flat rate shipping to canada only --> how do I set it up for only canadian residence?

Flat rate shipping to United States only --> how do I set it up only for the united states?

Flat rate shipping to International only --> how do I set it up for everywhere else?

is this even possible? Depending on the clients shipping address, they only get to choose either flat or Xpresspost to there location???

You could make 2 more clones of your current flat rate and xpress post (with new names) and apply each of them to the appropriate geo zone. Each one could have a different rate then.

Otherwise, have a look at the zone based shipping module. If you need more info on setting it up, there are some recent posts about it in the forum. You may have to clone it with another name to do the expedited shipping because you only get one rate per geo zone. This is probably the most complex solution though.
