For a florist who only uses a courier.
Options are
1. Free Pickup
2. Courier
We would also like an option where the buyer can choose..
am delivery
pm delivery
urgent delivery
late pm delivery
anytime delivery
What would be the best way to tackle this please?

How do you calculate your charges? If it's flat rates, you might be able to use Multi Flat Rate Shipping. You would just create rates for each of those options, with the associated rate.
If it's some other calculation, you'll likely need an extension like Formula-Based Shipping to create different charges.

She has just told me that most flowers have an 'included' delivery charge in the price, however outside her delivery area she has to charge.
I think maybe have a set of zip codes where she does deliver and all zips other than those are charged her delivery fee.
What does that sound like?
Any suggestions.

If she just needs an additional flat rate, you could use Postcode-Based Shipping to charge for particular postcodes, and then give free shipping for the rest of her delivery area. If she has further calculations (such as based on weight in those specific postcode ranges) then you would want to use Formula-Based Shipping.
Postcode-Based Shipping would work for that. Just specify a cost for each postcode range, and a 0.00 cost for all other ranges (by leaving the last cost bracket From and To blank).

ALL post codes have a standard across the board shipping fee of $30 (built into price) EXCEPT these which have free shipping as they are in our delivery area.
That way we can advertise Free postage within our delivery area.
Will this one do it, or do I need another?

Okay it seems to be okay when I choose the postcodes I have allocated the $30 to as it shows the options for the $30 charge or Pickup, however When it is a product which is within the 'free' or post included range, I only see.. Pick from Store option. I don't see anything whcih tells them post is included or there is no post etc.
What am I missing>
