Is there a way to do two different shipping options without then showing up at checkout? For instance, I'm using UPS shipping module but for one certain item I need it to be a flat rate shipping. But, Don't want the UPS rates to show up when they go to check out, just needs to be the flat rate.

Unless the shipping rate itself has product restrictions, you can't limit when it appears based on the products in the cart. You'd need to use an extension like my Restrict Shipping Methods one, which allows you to determine when shipping methods appear based on the products in the cart.

ok perfect, so with this module I can set this one item to flat rate and it will cancel out UPS appearance in checkout and only show the flat rate price?

If you have items A, B, C, and D that are shipped via UPS, and item E that is shipped by flat rate, then you can create two restrictions:

1. Have UPS appear when "ONLY ANY" of A, B, C, or D are in the cart.
2. Have Flat Rate appear when "ONLY ANY" of E are in the cart.

However, you'll need to choose what method you want to appear when both product types are in the cart, as Restrict Shipping Methods can only enable/disable shipping methods, not combine their costs.

On the example you just gave, say if items A, B, and E are in the cart so then it goes to Flat Rate shipping.

And say if item E is set to $300 flat rate shipping, would the total stay be $300 Flat Rate even there are 2 more items (A & B) on the cart?

Also since you said it does not combine shipping then is there an option to combine shipping if multiple items are purchased? Or should I have a disclaimer to the customer that if they order a item E that requires Flat Rate to only check out this one item. And then for them to go back and purchase items A & B on a separate order?

1. In the example I gave, neither shipping option is available if a mixture of A, B, and E are in the cart.

2. If you used the Flat Rate shipping method, then the charge would always be $300.

3. There is no way to combine shipping from multiple carriers. If you want a $300 additional charge for just Product E, why don't you give it a weight of 0 (so that it doesn't affect UPS) and then make an option that has a single value: Shipping +$300? Then you don't need to use any different shipping methods.

Ok so with this module all I need to do is add a new restriction, select ALL the shipping modules minus the FLAT Rate that I want to use, add ITEM A that needs to be flat rate only and that's all? Then the rest of the items will give UPS rate quotes and only ITEM A will show up as a flat rate. And if a customer wants to order more than just the FLAT RATED item it will have to be forced to either show flat rate shipping or give a UPS quote?

The shipping method you selected will be restricted on the criteria, so you'd need to create two restrictions, like so:

RESTRICTION #1
Shipping Methods: Flat Rate
Products: ONLY ANY, Item A

RESTRICTION #2
Shipping Methods: UPS
Products: NONE, Item A

If you want Flat Rate to show when both item types are in the cart, then you would change Restriction #1 from ONLY ANY to ANY. If instead you want UPS to show when both item types are in the cart, you would change Restriction #1 from NONE to NOT.
