Can OpenCart just display either "In Stock" or "Out of Stock" and not product counts?
Like if there is one product in stock it will display "In Stock" if there is no inventory display "Out of Stock".

Admin CP > System > Settings > YourStore [edit] > Option
Change:
Display Stock: No
You can also adjust your out of stock checkout, and set a default "Out Of Stock" message.
