Is there a way to create a special admin group that can post and edit products? They would need to only be able to modify their own products and have no other administrative permissions.

All you need to do is create a new user group and then set Access and Modify permissions. Turn all off except catalog/product.

Products are not assigned to individual users, so there's no way to limit certain users to edit only certain products. They either have full access to products or no access.
