I have 5 main parent categories. I would like to add a fixed shipping cost for each product within that parent category.

would it be worth making your own weight based banding table up then using the weight based shipping?
i.e
CAT 1 - anything up to 10kg costs £7.95 to ship (making sure each product in that category is weighted at 10kg )
CAT 2 - anything up to 20kg costs £10.95 to ship (making sure each product in that category is weighted at 20kg )
etc

Can your extension also have detailed costs within a category? For example I have some products like aromatherapy oils in small bottles that I want shipping to be say $6 for 1-15 oils, $10 for 15-25 oils which would be under one category. Then I have other individual products under other categories that are larger in size and require more for shipping.

You should be able to set up these costs by creating multiple rates within a category. In your example, you'd select the "Oils" category, and set a Quantity-Based rate of:
15:6.00, 25:10.00, etc.
Those numbers should apply to just the products within those categories. You'd then set your other rates for the other categories, and set the Multiple Rate Calculation to whatever you want (Average, Sum, Highest, or Lowest) of the two active shipping rates.
