Is putting something in the Dimensions (L x W x H) in the UPS settings required?
If I put something in there, what does it do? Is it like a default value if the product has no dim data, or is it an over ride for all products?

The opencart UPS extension doesn't support individual packages by default. It treats the cart as one big package. So that is the "Avg box dimension" ... might be too big, maybe too small. But it shouldn't change the rate by more than a dollar either way. best bet to use 10x10x10 as that is a nice "square" number.
