I doubt if such a feature would be added to the core unless there was also a config to remove it. I for one would remove it.
It is a great idea for sites who lend themselves to selling only a few products per order but for shops that have orders that are a long list, this could make it a very long invoice (the image takes up space).
However, it's not hard to implement. For the invoice, you need to add the image into admin/controller/sale/order.php in the private function invoice() area and also call it in the order_invoice.tpl
I think those are the related files. You might also need to add the image field to the corresponding model if it's not already available. I haven't had a good look so I don't know.
FInd a field in those files that you recognise, like the product name. Follow it and wherever you see it, add the image field to that block of code (while applying logical thinking)
For the .tpl bit, if you don't know html, use the cart template file for guidance.

When there are several similar products, an image is additional reassurance that the shop has received the correct product.
Additionally, in my particular case, if the email I as store owner receive, then it helps my employees prepare orders more efficiently, especially orders that include stencils, for example....there could be items named Stencil Cat 1, Stencil Cat 2,....Stencil Cat 10.....for a new employee, it's much faster to look at a matching image than look at my inventory labels each time...

Yes, depends on the product you sell. If you are selling laptops or mobile phones, imgaes are useless. If you are sselling very visual products, like designs, then images matter more than names/numbers.
