Modifying Cheque/Money Order

I was wondering if there was a way to modifying the Cheque/Money Order module 2 ways:
1) So Cheque was spelled Check for those of us here in the USA (not really a big issue though)
2) Remove the line "Your order will not ship until we receive payment." from the checkout process. We want our customers to pay by check but these are established customers. We're not holding their orders for payment.
