I've seen where the autopopulated state dropdown sits to the right of the country dropdown.
You may need to edit, or remove entirely, some of the countries like "South Georgia and the South Sandwich Islands" in order for it to fit nicely when the sizes change.

Your order confirmation emails get their "From" value from what you have set in your Admin Back office.
From the Admin screens top nav select Admin/Configuraion/Settings.
Click the Mail tab.
Enter the address you want to display to your customers in the E-Mail input box.
Test it.

Thanks for the reply. I messed up with the ctrl-click permissions change and now I'm locked out. I overwrote the Top Admin permissions so I replaced them with the Demonstration accounts. Is it possible to post the permissions for the Top Administraotr account or just the portion that will allow me ...

?? Developer Guide for Extensions
I'm going to figure this out eventually as I really want to put together an Authorize.net extension but wondered if anyone who has successfully written an extension for OpenCart couldcould pass on just a structural overview of how extensions fit in to OpenCart?
