SEO category/subcategory to category-subcategory

Dear,

I need to make some change to my seo link
i have a webpage with big subcategory and category. my sitemap have arround 50.000 line
so i nned to make some changes like
http://www.web.com/category/subcategory = http://www.web.com/category-subcategory/
and don't index all found in category. ONLY SUBCATEGORY

somethink like
http://www.web.com/prod1.html
http://www.web.com/category/prod1.html
http://www.web.com/category/subcategory/prod1.html
to redirect to
http://www.web.com/category-subcategory/prod1.html

i need to make some precisation

this prod1 is link to more other subcategory like
cat1/subcat1/prod1.html
cat1/subcat2/prod1.html
cat1/subcat10/prod1.html
cat2/subcat2/prod1.html
end more....

how can i optimize this

Whait i think to make this work is like
to make some change to disable product from category and index all in subcategory
