When all of the options for a product are out of stock, it still displays the title "Available Options" and also the title of the Option, e.g. "Colour:", but it then displays a blank space where the options would normally be. I think it would be better if we could set it to display all options regardless of stock levels, and simply strike-through the ones that are out of stock and grey out the corresponding radio button.

Sorry for the super late reply.

Nvm my post, i thought the stock option was written like other fields displayed in product page but it isn't. You can modify the out of stock status through admin cp (Localisation > Stock Statuses), through there the html tags gets filtered so there definitely needs to be some modifications done in core php files to allow html tags. Not as simple as i initially thought.
