I am considering upgrading from 1.4.9.3 however require all of my products and so far I have had no success in restoring them to a test version of 1.5.1 so am worried that I will loose the progress that I have made.
However, let's say I exported the products from 1.4.9.3 then installed the latest version of opencart, then imported the product list to the new version, would it work?

It is true that if you export your products from your 1.4.9.3 store and try to import them directly to your 1.5.1 store they will become loose and you will need to manually tighten them for them to fit your new store.
What you may be able to do is to create a product or two by hand in the new store and export them to a .csv file. Then compare the .csv format from the old store with the .csv format from the new store. Reformat the spreadsheet with the old store's products to be in the format the new store requires and import that resulting file.
