You have a product with 3 options:
Product 1
Color:
---- Red (default)
---- Blue
---- Green
Size:
---- Small (default)
---- Med
---- LG
Condition:
---- New (default)
---- Old
---- Refurb
of all those defaults will be selected just by clicking the add to cart button. Since they are dropdowns, there is no way for a customer to not choose an option. The result then is the cart showing:
Product 1
- Red
- Small
- New

Well now that you read the long answer, does the short answer make sense? I wasn't being snotty I was simply explaining why you see a line for each option. OpenCart doesn't currently support "optional" options like checkboxes or textboxes. It only offers forced options like select boxes (also radio buttons would be a forced option). So all options on a product would be relevant to show in the cart sidebox.
