I have to agree with you. Now when I open any category, by default it is sorted from the last added to the latest added product. Would be great to have at least an option in admin area, where you can choose, if you want to display products in each category sorted by ABCD, price, ...
On the data tab of your products, towards the bottom of the page, is an entry called, "Sort Order." That is where you specify the relative position in the display for that item.
