I'm looking to do the following, but am having trouble.

Automatically change the price of a product depending on that products total (not the order total) so that no matter the quantity purchased of that item, the cost can never go over $xxx.xx. EX: If product total price is set to a max price of $100 and customer orders $150 worth of the product, cart will automatically drop price down to $100.

Product base price that is added to the product after the customer selects the quantity at sale price. EX: Customer orders 10 chairs and each chair costs $5.00 for a total of $50.00. Cart automatically adds product base price of $12.95 to total for a new total of $62.95 (10 quantity x $5 product price + $12.95 product base price).
The extension "Product Based Fee/Discount" from Clear Thinking works well for this. Tried their demo, and after setting it up in the admin screen of the cart, had it to where when PRODUCT was added to cart, no matter the quantity, it always added a base cost of $300. So price was always [ (QUANTITY x SALES PRICE) + BASE PRICE]

Product can have the ability to continually add an option with a field (like a virtual ticket). Customer selects the product that has no quantity and costs $XX, however product has the ability to Option1 for an additional $10 but each time Option1 is added, customer must enter a name in the text box. Example: Customer purchases PRODUCT (no quantity) for $50. Customer then adds OPTION1 for an additional charge of $10 and enters name1 in text box. Customer then adds OPTION1 again and adds name2 in text box. Again with OPTION1 and name3 in text box. When customer adds to basket, Total of this Product is $50 for product + $10 for name1 + $10 for name2 + $10 for name3 for a total of $80.
