Sorry, can not only turn off for a theme.
You will need to run a check in the product.tpl for the theme and then do a if >> then >> else type of thing.

well if it's actually just in a particular theme it shouldn't be that big of deal since the whole ajax add to cart thing is in the module/cart.tpl file.
