I did not knew that opencart 3.0.3.8 does not support php 8

You could also upgrade to 3.0.4.1 - this supports php8 - but this might effect any modules / extension / theme you have ... Default Opencart should be fine - always back up your site before making any changes - database and files.
Making you pay "after" they did it seems unreasonable - but sales usually answer the phone / online chat - so use that to get it returned to 7.4 or make them check and pay only after you see it working.
Personally I would change hosts anyway, but doing it i a rush is probably not ideal for you.

For example, Bluehost does this. If someone truly cares about their business and security, they should choose a VPS or dedicated server. If those are unaffordable, a managed base-level VPS is still a better option than shared hosting.

Great news. Yes you should upgrade to 3.0.4.0 or 3.0.4.1 because php7.4 is no longer supported and has been upgraded for better security, performance and coding practices (that is the depreciations). There are other improvements made for security reasons also and a knock on effect of the php upgrade is other upgrades. Since it is still Opencart 3 it is a relatively seamless thing to do and whilst yes there will probably be some "depreciation errors to deal with - now is the time to check your extensions and see if they have upgrades for php8 (if you purchased them from opencart that should be painless).

Thank you for your advice, I commented the debug line in the startup.php file. They did not made me pay, I just did not want to wait for the support to answer me, that's why I paid for the php switcher as soon as I saw this feature in the panel.
