Moving and merging site - How?

I have purchased A website running OC 2.3.0.2 php 7.2 OC has quite a few mods
My server is running OC 3.0.4.0 php8.2
I want to copy all the products, categories and filters over to my new site. I don't care for any of the mods etc done to the one I purchased.
Please advise how I can automate this in any way. I don't care to manually enter all the information
