HI im always updating to latest github changes do i need to run the upgrade install page everytime i overwrite the files with newer ones?
(index.php?route=upgrade/upgrade ) or is that only for when i want to upgrade like bump a version for example from 3.0.8.0 to 4.0.2.0 i often have it get stuck at step 2 when upgrading i first just clone latest and overwrite my old files etc

i have that it often hangs on Image

You can probably get away with not updating if system/helper/db_schema.php or install/controller/upgrade haven't changed.

OpenCart's built-in upgrade will almost always result in problems. In most cases, it's easier just to do a fresh install.

if you know nothing about php coding, then please use the stable version.
if you know a little about php coding, then you can use the master branch.
upgrade (don't use the admin upgrade tool, just copy files and make some changes to the database) is always very easy if you can fix small bugs.

so using upgrade script is only needed when there are like mayor changes in the db etc?

Never change a running system!
Since IT exists, this is the first and most important statement.

Means, as long as there are no security patches/updates - there is absolutely no reason why a running webshop with OpenCart should be updated.
And OpenCart is famous to be secure.
