Although I configured and enabled the extension for 'ship by weight' with GeoZones, only 'collect in store' is showing when selecting shipment type (both in shop and admin). What am I missing ?

It works fine on my own installation of OpenCart 4.0.2.3. Perhaps you can check the following:
1. Ensure that "Status" is set to "Enabled" for Weight-based Shipping under the "General" tab, not just for each Geo Zone.
2. Based on your configurations for weight-based shipping method, the shipping prices are only valid for 0 to 30kg (assuming that your unit of weight is in kg). That means that once the total weight of products in your shopping cart exceeds 30, then the weight-based shipping method will not appear since there is no pricing for weight above 30. So you might want to check if your shopping cart has exceeded that weight.
3. Check to ensure that the Country and Region/State selected at checkout is in the Geo Zone of what you have set up in Weight-based Shipping method.
