I have never noticed this happening before (and total sales for a yearly interval used to very accurately match total revenue), but on my installation now running v3.0.4.0, I am seeing incomplete sales reports, and certain sold products only showing up if I set the report date to a specific interval near when they were sold.
This primarily affects a ticket we briefly sold, after which all existing sales were set to canceled. Yet I can now only find these sales in the report if I set the report interval to the specific _week_ in which the sales were done/registered, and they don't show up at all if I set the interval to 2024-01-01 to today. Is anyone else seeing this, and/or does anyone have an idea what may be causing this, and/or how to fix it?

For Sales Report, even if the order is canceled, if you set the "Status" filter option to "All Status", these canceled orders are included. If you are trying to exclude canceled orders, then you will need to specify an order status instead. The same goes for Products Purchased Report.

To clarify: when it comes to certain (but not all) sales (which were ultimately all set to canceled), when I set the filter to "all statuses", the sales don't show at all on the sales report unless I set the start date of the filter interval to 4 days prior to the first sale, which happened to be on the 10th or 11th. I am unable to reproduce your error. I just tested it on an OpenCart 3.0.4.0 site, with a Canceled order, and it shows up just fine in the sales report.
