Order states and order status

Is there any documentation that explains how orders go through states (eg a State Diagram would be nice), as presumably recorded in the Order History table as different states? For instance I have set payments (via the Stripe Extension) to set the status to 'Processed'. That was a guess, and Opencart seems to work OK.

If I send a message to the customer via the Admin system, I can do so via Add a new History record, and give it a State of Processing. Is that the correct Status to use?

In general it does no matter which status a order has.
The default values are "suggestions", based primary on PayPal's status messages.
And they are primary to inform the customer and show you (the admin) the current status of each order.

So, if you want to have your orders have a status of X when a customer make an order, set that status in the system config.
Also define the status you want to have when order are fully processed (shipiing is done, payment has arrived, etc.).

You can also create new order status and use them if you prefer.

Is this sort of info documented anywhere? I can't find anything from the developer(s) that resembles a reasonable Administrator's/System Manual/ Guide. How to newcomers learn this info? Surely not by trial and error or searching through years of forums and other online searches that are often only focussed on a version 1, 2 or 3 anyway.
