Noticed that all of a sudden any disabled products are showing this error if link clicked an: This page isn’t working is currently unable to handle this request. HTTP ERROR 500, this wasn't the case before, would something be causing this in the htaccessfile.

Create an index.html an check if is loaded...maybe is a server issue.

Check your server's PHP error log (not the same as the OpenCart error.log!). It will have more details about the exact nature of the error.
Also, you are using the Journal3 framework, which is different from the OpenCart framework, and has a number of known issues because of its poor software design. So you should really be contacting the Journal support on this.

I have been using Journal for a long time and never had this issue until few weeks ago, haven't updated journal or anything but I know have had issues otherwise and updated htaccess but didn't think it should effect this. Usually even though a product is disabled, if the link is clicked it would take you to the page but nothing is available to purchase, so it must be another reason. Getting this on the cpanel errors.

That error means you are trying to use php_admin_value in htaccess, which you can't do.
Did you check your PHP error log for errors? Could be error_log in your document root or admin directories. You can also use phpinfo() to find it.
As I said, this is not an OpenCart bug. Judging by your error message, you are not even using a standard .htaccess, let alone a proper OpenCart.
