I have products that are out of stock but somehow people are ordering and i have to refund, i can only think its off a google link. If product is QTY 1 which happened today, they ordered 2 and transaction went through? could anyone direct me what files to look at/?

Does the product have options?
Have you set (I can't remeber the wording off the top of my head) Allow Stock Checkout to NO? You'll find that in the Admin > System > Settings.
