We have had a webshop running on OC 2.1.0.2 for many years having no issues at all.
I would not have attempted any upgrade if it were not for the fact that our web-host has forced upgrading the PHP version from php 7.4 to php 8.0 !
This has resulted in several issues and upgrading the OpenCart version seemed the only reasonable action to take!
So I decided to give upgrading of the OpenCart version to the 3.0.x.x_Maintenance a shot!
Using FileZilla I followed the instructions and uploaded the contents of the Upload-folder on top of the folder containing the store.
When I went to the site to initiate the upgrade I was met by the following error:
"Notice: Error: Could not load template /var/www/0/127572/nettbutikk/install/view/template/common/header! in /var/www/0/127572/nettbutikk/system/storage/modification/system/engine/loader.php on line 86"
Is this an error that I can resolve in any way?

I would suggest to restore backups. Then, to install a fresh version of the platform and integrate the essentials from your database prior to reinstall any extensions you might have. Maybe not all the new files uploaded or there is a permissions error. Do you have a install/view/template/common/header.twg file?
Are you using a custom theme or any extensions as these will have to be upgraded as well. It can often be easier to export your data and import back to a clean install of a later version. There are a few posts on these forums about ways to upgrade.
It's also often simpler to patch old versions of OpenCart to work with later versions of PHP than to upgrade.

Then, you're experiencing the same issue as the solution that's been provided on the above.
